Grapes
The Saperavi grapes for our VAZIS XIDI Saperavi N°2 2017 grew in the high-altitude vineyards of the village of Chailuri in Kakheti, 800 meters above sea level. The vines, which are over 30 years old, are deeply rooted in calcareous, mineral-rich soil. Especially in the hot summer months, the scarce water supply forces the vines to drive their roots even deeper into the earth - in search of nutrients and balance.
Process
The carefully hand-picked grapes were gently pressed in the wine cellar. The must obtained was fermented on the skins in a qvevri - a clay amphora dug into the ground - according to ancient Georgian tradition and then matured in a second qvevri.
Vintage
The 2017 vintage was characterized by a hot and dry summer with temperatures of up to 37°C. This led to a particularly high concentration of fruit in the grapes.
Character
The pronounced but very fine tannins give the wine structure and lend it a soft and very varietal, complex character with a long, harmonious finish. The aromas are reminiscent of violets, blackberries, black cherries, plums, liquorice and dark chocolate. Its full body makes VAZIS XIDI Saperavi N°2 2017 the ideal companion for hearty dishes. It harmonizes particularly well with grilled meat, braised meat or strong cheese.
Ideal drinking temperature: 16 to 18°C
Allow to breathe or decant 15–30 minutes before serving.
