Grapes

In the high-altitude vineyards of the village of Chailuri in Kakheti, at around 800 meters above sea level, the grapes for our VAZIS XIDI Saperavi N°3 2016 were grown. The vines, over 30 years old, are deeply rooted in limestone-rich, mineral soils, producing grapes with pronounced structure and balance.

Process
The 2016 vintage was marked by a steady growing season with warm days and cool nights, allowing for slow ripening and particularly refined fruit expression. The hand-harvested grapes were traditionally fermented on the skins in qvevri and then further aged.

As part of the very first Vazis Xidi vintage, the VAZIS XIDI Saperavi N°3 2016 was vinified in several qvevris. A large portion of the bottled wine has been enjoyed by our guests directly in our cellar over the years, leaving only a small number of individual bottles available today.

Character

After several years of maturation, the Saperavi N°3 2016 reveals a complex aromatic profile ranging from fresh and dried dark berries and cherries to notes of chocolate, licorice, and tobacco, complemented by subtle spicy and slightly earthy nuances. The finish is very long and beautifully harmonious.
