Grapes

The rediscovered Khikhvi grape variety is among the rarer white grapes of Kakheti and is cultivated only in small quantities. It stands for distinctive, characterful wines with a strong sense of identity.

Process

The grapes for the VAZIS XIDI Khikhvi N°1 2023 were grown in Maghraani in Kakheti on limestone-rich, mineral soils. After hand-harvesting, the must was traditionally fermented on the skins in qvevri and aged for four months.

Character

Even in its youth, the wine shows a complex aromatic profile with notes of yellow fruits, honey, and delicate herbal spice. On the palate, it is concentrated and precise, with lively acidity and a long, mineral finish. Its pronounced tannins will become rounder and more refined with each passing year.

It pairs beautifully with aged cheeses, roasted poultry, dishes featuring walnuts and herbs, as well as Georgian specialties such as Sulguni or Badrijani Nigvzit.

Ideal drinking temperature: 12 to 14°C

Allow to breathe or decant 15 to 30 minutes before serving.
