In the high-altitude vineyards of the village of Chailuri in Kakheti, at 800 meters above sea level, the Saperavi grapes for our VAZIS XIDI Saperavi N°2 2017 were cultivated. The vines, over 30 years old, are deeply rooted in limestone-rich, mineral soils. Especially during the hot summer months, limited water availability forces the vines to extend their roots even deeper into the ground—seeking nutrients and balance.
The carefully hand-harvested grapes were gently pressed in the cellar. The resulting must was fermented on the skins in qvevri, then racked and further aged in a second qvevri. The 2017 vintage was defined by a hot and dry summer, with temperatures reaching up to 37°C. This resulted in particularly concentrated fruit.
The pronounced yet very fine tannins give the wine structure and lend it a smooth, varietal-typical, and complex character with a long, harmonious finish. Aromas of violet, blackberry, black cherry, plum, licorice, and dark chocolate define the profile. Its dense body makes the VAZIS XIDI Saperavi N°2 2017 an ideal companion for hearty dishes, pairing especially well with grilled meats, braised dishes, or aged cheeses.
